Delicious summer ice cream

Ingredients
Serves 6-8 persons.
- 3 super fresh, preferably free range egg yolks (they need to be fresh because you won't cook them)
- 3 dl (300 ml) cream
- 125 g cream cheese - I used Philadelphia, but if you don't like its saltiness, use Mascarpone instead (or any other good cream cheese)
- 1-2 dl (100-200 ml) sugar (depending on how sweet you like your ice cream; when I made it the first time, 200 ml was almost too much...)
- 1 1/2 Tsp vanilla sugar (I added 1/2 Tsp extra vanilla extract as well)
- 6-8 digestive biscuits (not necessary if you don't like them or can't eat them)

From ingredients to delicious ice cream

Crumble digestive biscuits and put in the bottom of a freezer container.


Put the cream cheese and all the dry ingredients in a mixing bowl. Mix well with an electrical mixer.


Add the egg yolks to the cream cheese mix. Again, mix well with an electrical mixer.
Don't throw away the egg whites when you separate the yolk! I use to put them in a smaller freezer container and use them later for other egg dishes like egg white omelet or meringue.


Mix the cream until it turns into a foamy mixture. Make sure your use a clean jar or container and clean whisk attachment, otherwise the cream won't thicken. Clean being the keyword here...



Add the cream to mixing bowl and blend carefully with a large spoon or spatuala with the cream-cheese egg mixture. Do not use your electrical mixer here.


Pour mixture into your freezer container with the crumbled digestive biscuits and put in the freezer for at least 4-5 hours.

4-5 hours later...

The ice cream melts very fast so don't wait too long before you serve it. Be creative and add decorations to your liking!
